Drying goji berries
First, wash the berries thoroughly in clean water to remove any dirt. Once washed, drain them gently and pat them with a clean towel to remove excess water. Next, arrange the berries on a baking rack, sieve, or tray lined with parchment paper. Make sure they are evenly spread out to encourage good air circulation. Choose a dry, well-ventilated area for drying. Avoid direct sunlight, as this can impair the berries' nutrients. Now let the berries dry for several days. During this process, turn the berries regularly to ensure even drying. This will also prevent mold from growing. Drying time may vary depending on the temperature, humidity, and size of the berries. Typically, it can take anywhere from a few days to a week for the berries to dry completely. They should be slightly soft, but with no visible moisture. Remember to check the berries regularly to determine if they are sufficiently dry. To check, cut one in half. The inside should be dry and free of moisture. Once drying is complete, transfer them to an airtight glass jar or a well-sealed storage bag. To maintain their freshness, store them in a cool, dark, and dry place. If you prefer a more precise and controlled method, you can also use a food dehydrator.
