Pumpkin Brioche

Here is a delicious original recipe for pumpkin brioche. Serves 6 Preparation: 20 minutes Cooking: 25 minutes - 500 g flour - 25 g baker's yeast - 200 g pumpkin - 80 g butter - 15 cl cold milk - 1 egg + 1 yolk - ½ tsp turmeric - 2 pinches of salt - 2 pinches of sugar - 1 tbsp pumpkin seeds Peel the pumpkin, cut it into cubes and cook them in the milk + 10 cl water. Then mix to obtain a smooth velouté. Let cool. Mix the flour, beaten egg, softened butter, turmeric, salt, sugar, pumpkin velouté and yeast. Knead for 5 minutes and let the dough rise for 1 hour in a warm place in the kitchen. Place the dough in a charlotte mold and shape a small ball of dough to put on top of the brioche. Let rise for 30 minutes at room temperature. Brush it with beaten egg yolk with a little water and prick the pumpkin seeds all over. Bake for 25 minutes at 180°C. Let cool and cut into nice slices.
