Broccoli and tofu with almonds
Broccoli and Tofu with AlmondsThis dish has everything it takes to become a classic on our table: it's ready in fifteen minutes flat, and the kids are so excited they even eat the vegetables! Here are some broccoli and green beans with almonds, garlic, and chopped coriander. Ingredients for 4 people: 2 cups of rice cooked in 3 or 4 cups of salted water 1 broccoli 500 g green beans 125 g tofu 50 g whole almonds with their skin 1 clove of garlic a few chopped coriander leaves tamari or shoyu (fermented soy sauce) - Rinse the rice and cook it in double its volume of water. - Separate the broccoli into florets and cut the stem into rounds (what a shame it would be to throw it away!). Cut the green beans in half. Steam or stew the vegetables with 1/2 glass of water. - Pour tamari into a bowl. Add the chopped garlic clove and coriander. Dice the soybeans and marinate them for a few moments in this sauce. - In a frying pan, pour a spoonful of olive oil and brown the almonds for a few minutes. Then add the drained tofu. You can keep the marinade sauce to serve at the table, but it is best to avoid pouring it into the frying pan, as this would make the contents too salty. Fry the tofu for a few minutes until golden. - Serve the vegetables with the almonds and tofu. You can offer a drop of the marinade on the rice.
