Carrot and orange flan

Such a pretty color and so good: carrot and orange combination for this flan which goes wonderfully with a salad or grilled meat. Ingredients: 1 onion about 400g of carrots 1 piece of chili pepper (optional) 1 orange cinnamon and cumin 2 eggs and one yolk 2dl of vegetable cream (here hemp). 1. Fry the chopped onion until transparent 2. Add the cleaned and cubed carrots + the small piece of finely chopped chili and let it cook together for a good 5 minutes 3. Add the juice of one orange + 1/2 teaspoon of cinnamon and 1/2 of cumin: cook over low heat with the lid on for about 15 minutes: check that the carrots are tender / add a little water if necessary 4. Mix 5. Add the mixture of eggs beaten with a fork with the cream + salt and pepper Distribute the mixture in ramekins previously coated with olive oil (I filled 6). Cook - in a bain-marie - in the oven preheated to 180 degrees for 20 minutes ... monitor and reduce to 150 degrees if necessary.
