Pea hummus

- 1 kg of peas in the pod (i.e. 500 g of fresh peas) - 3 tablespoons of olive oil - 2 tablespoons of almond puree - 2 cloves of garlic - the juice of half a lemon - salt and freshly ground pepper Shell the peas. Rinse them quickly. Steam them (in a stainless steel steamer) for 15 minutes. Refresh them in a bowl of iced water. Peel the garlic and remove the germ. Blend the peas with all the ingredients. Taste and adjust the seasoning if necessary. Serve with flatbread.
