Description

Caraway , also called "Meadow Anise", is a biennial plant of the Apiaceae family, cultivated for its aromatic and medicinal qualities ( antispasmodic , diuretic , stimulant , carminative ). The leaves and seeds are harvested. Its taste is less pronounced than that of cumin, but more fruity.
Caraway has the property of facilitating the digestion of dishes that are too rich.
Use : The seeds are used to flavor meats or sauerkraut and are eaten with certain cheeses . The leaves are used fresh in salads and soups . The roots are eaten as vegetables to flavor soups and stews .

Sowing and harvesting caraway

Sowing in spring : harvest the leaves three months later, the seeds can be harvested the second year.
Sowing in autumn : harvest the leaves the following spring.
