Description
White salsify is a variety with a long, thick white root of excellent quality. It has thick, narrow, blue-green leaves. The roots can be eaten cooked, fried, in salads, or with cream sauce. The young leaves are excellent fresh in salads.
How to successfully sow white salsify
Sow from March to May, in open ground, in loose, deep soil, in rows 20-25 cm apart. Keep the soil moist until germination. Cover the seeds with 2-3 cm of soil and then firm down. Thin out when the plants have a few leaves, leaving 8-10 cm between plants. Remove flower stems as soon as they appear.
Harvest 7-8 months after sowing.
