Thymus pulegioides
Also called shepherdess thyme or broad-leaved thyme , it grows naturally in dry , rocky meadows. This aromatic, creeping perennial , with pink flowers from July to October , attracts pollinators . During its dormant period in winter, its round, dark green foliage turns red, or even dark and dull. Planted in a sunny location, it will withstand trampling .
Uses of Shepherd's Thyme
Like common thyme , it is used to flavor meats , vegetables , cottage cheese and olive oil . However, its aroma is more subtle but just as strong as that of common thyme , its essence being very volatile. It is best used raw or added at the end of cooking . Long known for its medicinal properties , it can be consumed as a herbal tea .

Sowing : in spring and in a warm place (min. 20°C ) in light , dry and well -drained soil, every 30 cm .
Final planting density : 3 to 5 plants per m².
