Elephant Amaranth is known as the sacred plant of the Aztecs. The leaves of Elephant Amaranth are eaten young like spinach before the plant flowers. Elephant Amaranth seeds are used like millet. Amaranths are often grown as ornamentals for their foliage and flowers. Sowing: very thinly in April/May, in rows spaced 40 cm apart, in a sunny location, in loose, deep, humus-rich, and fresh soil, thinning to 30 cm. Water regularly. Mulching is recommended in case of drought. Very decorative with its carmine-red flower stems that can reach up to 1.50 m and retain their brightness for at least 3 months.
