The Anicia variety is the variety cultivated for the AOC Lentille verte du Puy or the Label rouge Lentille verte du Berry. The pods, containing 1 to 2 green lentils, are borne on thin, angular stems 25 to 75 cm high. Sow from late February to June, in pockets of 5 to 6 seeds, spaced 40 cm apart, in well-drained, sunny soil. Hill up when the plants reach 10 to 12 cm, without covering the leaves. Harvest from July to September. Let the uprooted plants dry in the sun for a day, then hang in bunches in a ventilated area. Eaten dry. Digestible and very rich in protein, recommended as part of a vegetarian diet.
