Description

The most common name for this spinach sorrel is actually patience. But whatever its name, patience is a vegetable related to spinach in its shape, taste, and uses, but also to sorrel, of which it is a close cousin. Rich in oxalic acid, which gives it its acidic flavor, it is used in sauces, pies, etc. Successfully sowing sorrel Sow in a nursery or in pots from March to June. Cover the seeds with seed compost one to twice their thickness. Firm. Water. Keep the soil fresh. Planting spinach sorrel in the vegetable garden Transplant it in the garden when the plants have 4-5 leaves, spacing them 30 cm apart in light, humus-rich, fresh soil in a sunny or partially shaded location during the summer. Then, it can remain in place for 4 or 5 years without any problem. Growing spinach sorrel Do not hesitate to remove the flower stalks as soon as they appear, otherwise you risk exhausting the plant and seeing an invasion in your garden. In addition, this operation will encourage the production of tender shoots. The leaves disappear in winter, mark it with a label, it will start growing again next spring. Watch out for snails and slugs that love sorrel leaves. Sorrel appreciates the humid periods of spring and autumn, water at the base if the weather is dry. Harvesting The leaves are harvested gradually by detaching the leaves from the base. Note that this is one of the first vegetables to be harvested in the garden, from March. Its flavor is sweet and similar to that of classic spinach and sorrel. The more foliage you harvest, the more you stimulate the regrowth of new leaves.
