Description
Black salsify is a perennial plant, grown as an annual (sowing in March/April) or biennial (sowing in August/September).
Long, smooth, cylindrical root with very black skin and white flesh.
Not very sensitive to rising, does not give a hollow head.
Close to salsify in its cultivation and preparation in the kitchen.
Variety sometimes called Giant Westlandia or Duplex.
Sowing : light, in place, from March to April, in rows spaced 30 cm apart. Thin out when the plants have 3-4 leaves 8 cm apart in the row. Harvest the roots 7 to 8 months after sowing.
