Sowing: outdoors from April to June.
Harvest: August to September, whole pods at the immature stage.
Use :
Like our classic beans, the immature pods or young green grains are eaten after a quick boil (5-10 minutes) or steaming. They can be served chilled with fleur de sel, as an aperitif, with sushi, or hot in tomato sauce. The pods and grains, which have a very high protein content, also provide iron and fiber.
