Evening Primrose (or Enothère) is a biennial plant, also called Evening Primrose or "gardener's ham". The fleshy root, with white flesh, firm, sweet, very fragrant, is eaten cooked like salsify, in juice, in gratin, in soup or in salad. Sowing: light, in place in September-October (emergence the following spring) or in April in sunny or semi-shaded exposure, in rows spaced 35 cm apart, thin out to 15 - 20 cm on the row.
